INGREDIENTS:
1 ripe mango
2 tablespoons sunflower oil
2 cloves garlic, crushed
1 inch piece fresh root ginger, finely chopped
4 chicken breast fillets, cut into strips
5 oz snow peas, halved length-ways
2 celery sticks, thinly sliced
1 yellow pepper, cut into matchsticks
4 spring onions
sea salt and fresh black pepper
Juice of 1/2 lemon, 1 teaspoons with wine of apple juice
1 tablespoon balsamic vinegar
1 tablespoon clear honey
2 tablespoon chopped fresh cilantro
Preparations:
- Slice the two fatter “cheeks” of the mango from either side of the stone. Cut a cress-cross pattern across the flesh of each piece to divide into small cubes, then push the skin inwards and slice off the cubes. Set aside.
- Heat the oil in a wok or large frying pan until hot. Add garlic, ginger and chicken and stir-fry for 3 min. Add snow peas, celery and pepper and stir-fry for 3-4 min. Add the spring onions, mango and seasoning and then stir-fry for a further 2 min.
- In a small bowl, combine the lemon juice, white wine or apple juice, balsamic vinegar and honey. Add to the wok and continue to cook for a further 2 min. Add the cilantro and serve over rice. Enjoy!
