EASY BREAKFAST MEXICAN EGGS

Ingredients:

1 can (12 oz) black beans or fried beans

1 can (12 oz) stewed tomatoes

8-4-inch tortillas

4-8 eggs

Salsa of your choice

Sour cream of your choice

Preparations:

  1. Heat Tortillas, heat, stewed tomatoes and fried beans, poached or scramble eggs
  2. Per plate put 2 Tortillas, 1 or 2 eggs, 1 dollop of beans and stewed tomatoes with sour cream and salsa on top.
  3. Options:  – add tomatoes, onions, olives, lettuce and avocado to garnish
  4. Eggs over easy: Sate onions, fresh tomatoes, Jalapeno or any kind of veggies, stir and put over it.     – or heat tortilla and put veggies on it.   Enjoy!
