Tuesday, May 5th is Cinco de Mayo and today we can enjoy many favorite Mexican dishes. One of my favorite is guacamole which is made from healthy fat avocados. Avocados contribute nearly twenty vitamins, minerals and phytonutrients. A serving of avocado contains 8 percent you’re recommended daily allowance of vitamin K, a fat-soluble vitamin that is needed for blood to clot properly. A single serving of avocado also contains 6 percent of the recommended daily allowance of folate, which is necessary for growth and development.
Enjoy eating avocado as a snack or alongside a meal. They can be crushed with onion, garlic, tomatoes and spices and eaten on whole-grain crackers. Use avocado as a topping for soup, chili, salads and as a dip.
